Molcajete - This is one of our signature dishes. It's filled with grilled chicken, steak, chorizo, onions, cactus and queso fresco. According to Epicurious.com: "The word molcajete (mortar) derives from Nahuatl, the language of the Aztecs: “molli” (seasoning or sauce) and “caxitl”
(bowl). The word tejolote (pestle) also derives from Nahuatl: “tetl” (stone) and “xolotl” (doll)."
Mexican foods traditionally prepared in the molcajete include salsas and mole's (mohl-LAY), as well as guacamole. It is also used for grinding chilies, garlic or other herbs and spices for
mexican food preparation.

Mole is one of the most traditional sauces in Mexico. Nobody really knows how old the receipe is, but it dates back to the Aztec Empire.
We have mole on our menu; but due to health department constraints, we can't make it exactly how the ladies did in the video. Although it tastes better using traditional methods, we do use the proper ingredients to make our mole sauce.
